How Does It Not Dull Knives If It’s Stainless Steel?

High-quality kitchen knives are made from extremely hard high-carbon stainless steel, rating around 58-63 on the Rockwell hardness scale. In contrast, stainless steel cutting boards rank much lower at only 35-45 HRC.

This means the ultra-hard knife blades won't get nicked or damaged by the relatively softer stainless steel surface when chopping. Like wood, the stainless steel "gives" just enough to prevent excessive blade dulling while still providing a non-porous, easy-to-clean surface.
